Rack of lamb with Mustard and Herbes de provence

Lamb is a very common dish in Morocco. Moroccan eat lamb in Tajines, or BBqed, or in stews.

I love preparing a rack of Lamb with mashed potatoes.

So here is what you need:

1 Rack of Lamb

2 Tbsp of Dijon Mustard

1 Tbsp of Herbes de provence

1 Tsp Dried rosemary (powdered)

1 Tbsp Olive oil

Prepration:

In a bowl, mix the mustard, Herbes de provence, Rosemary powder, and the olive oil until you get a paste. Rub the rack of lamb with the prepared paste cover and let sit for 5 to 10 minutes while the oven is preheating to 400 °F (204 °C). Put the rack of lamb on a tin foil covered cookie sheet and out in the oven Cook for 18 minutes for medium rare, or more for well cooked.

Get the lambou of the oven, cver completly with a sheet of tin foil and let it sit for 15 minutes.
