Apple Pie

I love the smell and taste of a tradionnal apple pie. Today I was expecting a visit from a dear friend so I decided to bake an apple pie to have with Vanilla Ice cream and coffee or tea.

I will be honest with you, I use the commercial pie shell form the store my favorite is Tenderflake.

So here is what you need:

9 inch pie crust (Tenderflake is a good choice)

6 empire apples thinly sliced and peeled

2 Tbsp lemon juice

1/2 cup cane sugar (or granulated sugar if that is what you prefer)

4 Tbsp Almond meal / Almond flour

1/2 tsp Cinnamon

Pinch of Nutmeg (optional)

For the topping:

2/3 cup Almond flour / meal

1/2 brown sugar

1/2 Tsp Cinnamon

Pinch of Nutmeg (optional)

5 Tbsp cold butter cut into thin pieces

Preheat the over to 425 F

Mix the apples, lemon, the cinnamon, Alomnd flour and sugar until all the apple pieces are well coated

Pour the mixture in the unbaked pie crust

Mix the Brown sugar, Almond Flour, Cinnamon and butter untill crumbly. add this mixture on top of the apples in the crust.

Bake the pie @ 425 F for 12 min. Then Reduce the temperature to 350 F and bake for an additional 40 min.

Cool the pie and serve with Vanilla Ice cream or Whipped Cream.

Warning : I love my apple pie warm, so I served mine befor eit settled and cooled properly and it was a big mess … My advice is to let it set before cutting and serving it 🙂 Unless you are impatient like me 🙂
