Creole Chicken Alfredo

Well, today was one of those days when I open the freezer or the fridge and wonder what am I gonna cook for supper today?

Luckily for me I had:

2 Chicken breasts

2 Green Peppers thinly sliced

1 red Pepper Thinly sliced

2 Yellow Peppers thinly sliced

1 Spanish Onion Thinly sliced

1 Tsp Garlic powder

4 Tbsp Creole Seasoning ( from Balk Barn)

Olive Oil

Table Cream 18%


French Red Wine ( Georges Duboeuf Brouilly) (Because I enjoy csipping wine while I cook)


Cut the Chicken Breasts into thin slices, slice the onion, mix the chicken and the onion in a Bowl and add 3 Tbsp of Creole spices, 1 tsp Garlic powder, and 1 Tbsp Olive Oil. Mix well and let sit for 5 min.

Heat 1 Tbsp olive oil in a big pan add the chicken and onion and cook on high until the onions are translucent, ย add the sliced Peppers, cook on high for another 5 min. Turn down the heat and let everything cook untill the peppers and the chicken are well cooked, uncover and let cook on med for another 5 min (for the extra sauce to evaporate)

Add 1 cup of cream, some red wine if you want, and let simmer. Salt to taste.

Boil some water, witha a dash of salt and olive oil and cook the Fettuccine for 9 min.

This recipe makes 5 meals.
